據了解,白酒存儲的環境受到一年四季氣溫變化的影響。酒的儲藏過程當中,陳釀老熟受到太多外界的影響,特別是溫度和濕度的影響,因此儲藏環境對白酒品質的影響甚大。洞藏,這種具象化的描述很好的描述了洞中恒溫恒濕的儲藏環境對于白酒品質的提升,顯然更有利于消費者接受,由此將形成白酒行業的下一個趨勢和市場賣點。

窖藏一般指白酒生產企業將精選出的原漿酒,盛入以陶質容器為主或其他適宜窖藏的容器內,貯藏在地下、巖洞、半地下的酒窖內,酒窖的溫度要求四季溫差不宜過大,也就是冬暖夏涼,通風良好。好的窖藏酒須符合以下三個條件 1:須是傳統工藝生產的純糧原漿酒,2:盛酒容器上選是紫砂,其次陶、瓷,3:貯藏環境除地下室和農村地下窖外,也可因地自宜,選擇不用經常搬動的倉房或空地都可。如有條件可以將眾多的白酒(陶壇裝)放到一起,我們經過實踐覺得眾多的酒在一起貯藏,要比單獨存放的酒品質提升的快。
