散白酒的鑒定好壞的方法

散酒，與市面上的成品酒是一樣的，區別在于沒有包裝，而是通過純糧釀造的大量白酒。

釀酒有兩個生物化過程：一是淀，二是酵。這兩個過程須由糖化菌來進行， 三千二百多年前的殷商武丁時期就已經掌握了微生物“霉菌”生物繁殖的使用麥芽和谷芽制成，作為糖化發酵劑來釀造，使用谷物糖化發霉和酒精發酵起來，一起釀酒了。

可見，我國是很早以制曲釀酒的國家。

釀造原料主要有原料，輔料，酒曲等，釀酒工藝主要有固態法和液態法兩種。

在感官鑒別散酒的真偽與優劣時，應主要著重于酒的色澤、氣味與滋味的測定與評價。在目測散酒色澤時，應先觀察其透明度，并顛倒，檢查底部有無雜質下沉，或者有無懸浮物等，然后再倒入燒杯內白色背景觀察其顏色。

散酒的氣味和滋味是評價散酒質量的關鍵指標，應在常溫下進行，開瓶后立即進行品嘗。
